Overview

As the Regional Director of Food & Beverage, you will be responsible for overseeing and managing all food and beverage operations for our two casino properties located in central and northern Mississippi. You will provide strategic leadership, drive innovation, and ensure the highest level of guest satisfaction within the culinary and dining departments, as well as assisting in developing food programming for future developments. This role requires a strong background in food and beverage management, exceptional leadership skills, and a passion for delivering outstanding guest experiences.

Responsibilities

Develop and execute the overall food and beverage strategy for both casino properties, aligning with the company\'s vision and goals.

Direct and supervise all food and beverage operations, including restaurants, bars, lounges, banquet facilities, room service, and catering.

Establish and maintain high-quality standards for food preparation, presentation, and service, ensuring consistency across all outlets.

Collaborate with department heads, executive chefs, restaurant managers, and other team members to create innovative menus and dining concepts that meet and exceed guest expectations.

Monitor and audit financial performance and budgetary guidelines to maximize revenue, control costs, and achieve profitability targets.

Implement effective inventory management systems and controls to optimize food and beverage inventory levels and minimize waste.

Ensure compliance with health, safety, and sanitation regulations, maintaining a safe and clean working environment.

Recruit, train, mentor, and motivate a high-performing team of food and beverage professionals, fostering a culture of excellence and teamwork.

Provide both positive and negative feedback to staff, identifying departmental and individual areas for improvement and implementing training programs as needed.

Stay abreast of industry trends, market demands, and competitor activities, making recommendations for improvements and enhancements to remain competitive.

Foster positive relationships with suppliers, negotiate contracts, and manage vendor relationships to ensure quality and cost-effective procurement.

Collaborate with marketing and sales teams to develop and execute promotional initiatives, special events, and marketing campaigns to drive revenue and enhance guest experiences.

Qualifications

Bachelor\'s degree in Hospitality Management, Culinary Arts, or a related field preferred

Proven experience as a Director of Food & Beverage or similar role in the hospitality or casino industry.

Strong knowledge of food and beverage operations, including culinary techniques, menu development, and restaurant management.

Excellent financial acumen with a track record of successfully managing budgets, controlling costs, and achieving financial targets.

Exceptional leadership abilities, with a demonstrated ability to motivate, develop, and manage a diverse team.

Excellent communication and interpersonal skills, with the ability to build positive relationships with staff, vendors, and guests.

Strong problem-solving and decision-making skills, with the ability to handle multiple priorities in a fast-paced environment.

Up-to-date knowledge of health, safety, and sanitation regulations, as well as industry trends and best practices.

Proficient in computer systems and software relevant to the food and beverage industry.

Flexibility to travel between the two casino properties and other locations as needed.
