Responsible for contributing to the efficient operation of the Grill by making sure company policies and procedures are followed and to ensure that the shift contributes to the increase of profitability of the Grill. Serves customer needs and wants at all times in a professional, courteous manner, which results in a satisfied, repeat customer.
Essential Job Responsibilities and Duties
Maintain a high quality of guest service according to Jacobs Entertainment, Inc. Mission Statement and F.A.S.T. Track Values Statement.
Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers, and a variety of other kitchen equipment.
Assumes responsibility for the quality of products served.
Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
o Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period. o Portions food products prior to cooking according to standard portion sizes and recipe specifications. o Monitors and maintains proper temperature on all product.
Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, saute' burners, convection oven, flat top range and refrigeration equipment.
Prepares items for broiling, grilling, frying, sauteing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
Follows proper plate presentation and garnish set up for all dishes.
Handles stores and rotates all products properly.
Assists in food prep assignments during off peak periods as needed.
Ensuring that kitchen is clean at all times by sweeping, mopping, washing dishes, and general maintenance each day.
Stocking food in coolers and freezers.
Reduce theft loss and shrinkage by following company policies and procedures and by practicing honesty in the workplace.
Follow and enforce all company standards, policies, and guidelines.
Complete all other grill tasks and activities as assigned by the Grill Manager in a prompt, cooperative and accurate manner.
o Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing kitchen. o Attends all scheduled employee meetings and brings suggestions for improvement.
Thorough knowledge of applicable Company and departmental policies and procedures as well as the willingness to learn and follow any policy or procedure that may be introduced in the future.
Adhere to all appearance and uniform standards.
Maintain an open line of communication with Management.
o Maintain a positive and professional demeanor during all interactions with guests, fellow Employees, and Vendors. o Ability to accept performance feedback in a professional manner.
o Regular attendance and arriving on time to all scheduled shifts and mandatory meetings. o Other duties as assigned.

Skills, Education and Other Requirements
The ability to read, write and understand the English language at a high school level.
The ability to perform mathematical calculations at the eighth grade level.
Sufficient visual acuity to prepare and deliver food, as well as track order tickets.
Ability to read and understand instructions for operating electronic cash register and other equipment.
