Job Description


The Food and Beverage Staff Lead is responsible for providing food and beverage services throughout Thunderbird Entertainment Center locations. Food & Beverage Team Lead is responsible for ensuring that Food and Beverage team members are effectively taking orders, handling monetary transactions, preparing food orders, ensuring food safety, cleaning work stations, following required serving (ABLE) laws, while providing high levels of customer service. Food and Beverage Team Lead will work hours appropriate to meet the needs of the business, which may include nights, weekends, holidays, and special events. Essential Job Functions:

  • Ensure safety and cleanliness of department at all times.
  • Must provide a high level of customer service to all patrons.
  • Provide a leadership role to all Food & Beverage employees.
  • Assist in scheduling for employees as needed.
  • Prep equipment and stations.
  • Take food and drink orders.
  • Ensure that all employees are working effectively.
  • Prepare food items from recipes.
  • Prepare food orders.
  • Operate cash register.
  • Ability to handle and count money.
  • Ensure proper portion control.
  • Ensure proper and legal serving of alcoholic drinks.
  • Clean equipment and work areas.
  • Ensure food temperatures are safe levels at all times.
  • Stock work area.
  • Prep and remove frozen items as outlined.
  • Clean all work and serving areas (including pop machine).
  • Ability to handle fast paced areas.
  • Must be able to stand for long periods of time and walk the casino floor as needed.
  • Must be able to identify intoxicated patrons for serving beer from grill area.
  • Must abide by responsible serving and ABLE laws.
  • Must maintain compliance with health/ABLE/internal Policy and procedures at all times.
  • Complete end of shift paperwork.
  • Pull trash.
  • Ensure equipment is turned off when the department is shut down.
  • Any other duties assigned or requested by management.

Equipment used:
  • Grill, Gas or convection ovens, fryers, food slicers, dishwasher, steam table, cash register, computer, credit card machine.

Job Knowledge, Skills and Abilities
  • Must maintain compliance with heath/ABLE/internal Policy and procedures at all times.
  • Must be able to stand for long periods of time.
  • Ability to work in a lead role and be effective
  • Ability to establish and maintain effective working relationships with individuals at all levels of the organization.
  • Ability to learn how the grill functions.
  • Ability to perform basic math functions; add, subtract, multiply, and divide in all units of measure.
  • Knowledgeable of Federal/state/Tribal Employment laws and regulations.
  • Ability to establish and maintain effective working relationships with individuals at all levels of the organization.
  • Ability to make food and drink orders.
  • Demonstrated ability to handle multiple tasks simultaneously; skilled in working in an environment subject to constant interruptions and quickly changing priorities.
  • Ability to function in a professional manner during high stress/volume situations.
  • Ability to learn quickly, self-leader with initiative, highly flexible and comfortable in a constantly changing environment.
  • Ability to work in a team-oriented, collaborative environment and independently.
  • Excellent interpersonal and communication skills to establish and maintain effective working relationships.
  • Strong problem-solving skills and keen attention to detail.
  • Knowledge and ability to use grills, gas or convection ovens, fryers, slicers, registers and credit card machines.

Supervisory Responsibilities
  • Will assist Food & Beverage Supervisor and Manager with supervisory duties.

Physical Demands

  • While performing the duties of this job, employees must be able to sit, stand, or walk for long periods of time. The employee must occasionally lift and/or move up to 50 pounds.

Work Environment

  • Exposure to smoking and secondhand smoke.
  • Must be able to work nights, weekends and holidays.
  • Noise level can range from minimal to intense.

Minimum Qualifications
  • High school diploma (or equivalent combination of education and experience combined).
  • Must be 18 years of age or older.
  • Must be able to pass a drug screen, background check, and obtain a key gaming license.
  • Must be able to obtain liquor license.
