Duties



Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes with precision and artistry Maintain high standards of food safety, cleanliness, and hygiene in all food handling and preparation processes Select fresh ingredients and ensure proper storage to uphold quality standards Develop and execute innovative sushi menu items that align with restaurant themes and customer preferences Manage ingredient inventory, monitor stock levels, and place orders as needed to ensure seamless kitchen operations Collaborate with kitchen staff to coordinate meal preparation and ensure timely service during busy hours Uphold strict knife skills for slicing fish and vegetables accurately and efficiently Assist in training junior kitchen staff on sushi techniques, food presentation, and safety protocols Ensure all food preparation adheres to health regulations and sanitation standards Participate in catering events or special functions by preparing sushi for larger groups or private parties Contribute to a positive team environment by maintaining professionalism and supporting colleagues

Requirements



Proven experience as a Sushi Chef or in a similar culinary role within fine dining or Japanese cuisine establishments Strong knowledge of food handling, safety procedures, and sanitation standards in the food industry Demonstrated expertise in menu planning, ingredient sourcing, and food presentation techniques Excellent knife skills with the ability to prepare fish, vegetables, and other ingredients precisely Background in dietary department or dietary aide experience is a plus for accommodating special dietary needs Experience with food preparation, cooking techniques, and meal assembly in a restaurant setting Familiarity with catering services and large-scale food service operations is advantageous Ability to work efficiently under pressure while maintaining attention to detail Passion for culinary arts with a focus on Japanese cuisine and authentic sushi craftsmanship
