Position Overview

Primary Function:


Responsible for the receipt, movement, proper storage, and organization of all products (food and non-food) for Sewanee Dining. This individual will maintain all storage areas, ensuring each area is cleaned regularly and all products are stored according to HACCP guidelines. At a minimum, this individual will conduct a monthly inventory. They will assist the Executive Chef/Procurement Coordinator in placing orders with all vendors and check in products for wholesomeness, ensuring that received products match orders and are at the proper temperatures and within date ranges. This position will also assist the Kitchen/Production Manager with the location and organization of products for each station or department (e.g., homeline, catering, salad bar, or grill).

This position works with considerable independence and self-direction. Only the general direction and scope of the work to be accomplished are discussed with the supervisor.

Typical Duties & Responsibilities:



Report to work consistently and on time; regular attendance is required, and all hours must be accurately recorded in the University's electronic timekeeping system. Assist the Executive Chef/Procurement Coordinator with ordering and receiving products from vendors. Notify management of stock issues and maintain inventory accuracy by ensuring delivered items match invoices. Ensure all products are received within proper temperature ranges and that vendor trucks are clean. Maintain all storage areas by cleaning regularly and following HACCP guidelines, including the basement CO2 tank and grease trap. Rotate products using First In First Out (FIFO) procedures and ensure products are stored by "use by date" to maximize quality and minimize waste. Keep work areas clean and sanitized; ensure the same items are stored together and that the receiving dock is organized. Operate all equipment safely and maintain labor-saving devices in working order. Develop a safe work environment and culture to limit staff injuries while ensuring food safety and sanitation standards are met. Oversee other storeroom personnel, assist production staff with necessary products, and help with special events as needed. Take and record monthly inventory, ensuring proper management of waste and recycling. Ensure compliance with University and Departmental policies; perform other duties as assigned.

Machines & Equipment Used:



Equipment in an institutional food warehouse: manual pallet jacks, electrical pallet jacks, dock levelers, delivery trucks, floor machines, mobile shelving, freezers, and refrigeration

Working Environment:

High volume storeroom and loading docks that can have extremes of temperature with possible rain, snow, or sleet. Will work for long periods of time in walk-in refrigerators and freezers. Will work in and around delivery trucks in extreme weather. Must be able to lift objects that weigh 75lb or more with assistance. There will be a great deal of bending, stooping, lifting, and reaching.

Physical Requirements:

Must be able to stand for extended periods of time, Must be able to walk for extended periods of time, Must be able to push and/or pull objects, Must be able to lift between 51-100 pounds (Heavy work), Must be able to carry between 51-100 pounds (Heavy work)

Dining Hall Closures:

+ The dining hall periodically closes for scheduled shutdowns. Employees are expected to follow any modified schedules or assignments during these periods.

Attendance and Time Tracking:

+ Regular attendance is required, and all hours must be accurately recorded in the University's electronic timekeeping system.
