Job Summary
The Pastry Chef at the Cleveland Museum of Art oversees pastry production for an upscale casual cafe, fine dining restaurant, and internal/external catering programs generating $6-8 million in annual revenue. This role leads a team of 3-4 bakers, supports the savory team for large events as needed, and ensures high-quality, creative pastry offerings aligned with museum standards. The museum is closed most Mondays and most federal holidays.
Key Responsibilities:
Oversee all pastry preparation, production, and ordering
Manage and develop a team of 3-4 bakers
Maintain strict adherence to HACCP, sanitation, and food safety standards
Handle and store perishable products properly
Develop seasonal and event-driven pastry menus for cafe, restaurant, and catering operations
Support the savory team for large-scale events at the Executive Chef's request
Monitor inventory, food cost, and product quality
Recruit, train, and coach hourly associates
Preferred Qualifications:
Culinary degree preferred
Minimum three years in upscale or high-volume restaurant and/or catering environments
Experience with formal dining and wedding cake production preferred
Strong creative and technical pastry skills
Solid knowledge of seasonal ingredients, menu development, and cost control
Proficient in Microsoft Office
ServSafe or Department of Health certification a plus
