Full-Time Pasta Maker -- Mileta (Lexington, KY)

Mileta is seeking a

full-time Pasta Maker

to join our culinary team. This position is a cornerstone of what we do as our pastas are made in-house every day, and this role is responsible for producing them with precision and consistency. The ideal candidate thrives working independently, maintains exceptional attention to detail, and takes pride in their craft. You'll often be working in view of our guests and sometimes interacting with them, representing the heart of our kitchen. Applicants must be fluent in English.

What You'll Do

Produce all fresh pasta for service, including rolled, filled, and extruded shapes Manage daily prep lists, dough hydration, and consistency of textures Maintain strict attention to detail in portioning, lamination, shaping, and storage Monitor inventory, supplies, and minimize waste Keep the pasta area spotless, organized, and guest-presentable Interact with guests in an open-kitchen environment with confidence and professionalism Assist with additional prep or production tasks as needed by the chef team

Who You Are

Self-motivated, organized, and obsessive about precision Comfortable working solo and taking initiative Passionate about technique, texture, and consistency Have prior pasta-making experience (restaurant or production setting preferred) Able to stand for long periods, repetitive motions, and lift up to 50 lbs Open to learning, growing, and contributing to Mileta's collaborative culture

Job Type: Full-time

Pay: $17.00 - $19.00 per hour
