The Head Baker plays a pivotal role in supporting the Executive Chef and ensuring the smooth, day-to-day operations of the bakery kitchen. This position is hands-on and collaborative, working closely with the culinary team to ensure efficient production that aligns with Red Truck Bakery's standards of excellence.
As a leader within the bakery, the Head Baker sets the tone for the team--modeling professionalism, positivity, and a commitment to both quality and hospitality. This role reports directly to the Executive Chef and supports the overall goals and values set by the Company's leadership.
Head Bakers are expected to:
Lead by example and uphold the mission and values of Red Truck Bakery.
Prioritize hospitality, attentively serving guests and the team by fostering a welcoming atmosphere.
Develop a personal "hospitality practice" that reflects excellence, flexibility, compassion, and self-care.
Attend and contribute to weekly operations meetings.
Present a unified and collaborative front alongside other company leaders.
Take ownership and accountability for tasks while embracing collaborative teamwork.
Maintain strong relationships with local suppliers, artisans, and farmers.

Key Responsibilities
Daily Production & Menu Development
Effectively and efficiently participate in daily production
Monitor daily inventory levels and ensure proper product rotation.
Create, update, and manage daily production lists, delegating tasks efficiently.
Manage special orders, ensuring quality and timeliness.
Collaborate with Head Bakers and Executive Chef on new menu items.
Oversee product quality control, addressing any concerns proactively.
Ensure products are consistently available and visually appealing throughout the day.
Follow and help refine operational procedures and quality standards.
Maintain cleanliness and organization in all kitchen areas.
Strictly adhere to health and safety regulations, including sanitation and food handling.
Submit completed waste logs weekly, striving to minimize waste.
Team Management & Training
Supervise daily production and maintain high performance from all team members.
Lead and support bakers and dishwashers during shifts.
Ensure all kitchen staff are well-trained and aligned with company standards for cleanliness, professionalism, and productivity.
Reinforce adherence to the published schedule and daily expectations.
Guest Experience
Be a visible and engaged presence in the bakery, interacting warmly with guests.
Ensure product presentation meets brand standards.
Work with leadership to cultivate a memorable, repeat-worthy guest experience.
Qualifications & Requirements
3+ years of baking/pastry experience
2+ years of kitchen management experience
Culinary or baking education preferred
Excellent communication, time management, and multitasking abilities
Strong attention to detail and sense of urgency
Ability to work both independently and collaboratively
Comfortable lifting up to 50 lbs and working in a hot, fast-paced environment
Flexible availability, including weekends, holidays, early mornings, and afternoons

Pay: $45,000.00 - $50,000.00 per year
