The Food & Beverage Director is responsible for the leadership, strategic planning, and execution of all food and beverage operations across the property. This includes managing multiple outlets, maintaining the highest standards of service and quality, driving revenue through marketing and programming, and effectively managing labor and expenses. The ideal candidate is a hands-on leader who thrives in both a member & guest focused environment and brings creativity, organization, and operational excellence to every facet of the F&B program.
JOB FUNCTIONS
Leadership & Operations
Oversee day-to-day operations of all F&B outlets, including The Grille restaurant & bar, Cowboy Cafe, Howdy's poolside food truck & bar, and any other additional food & beverage sanctioned areas.
Hire, lead, mentor, and develop a high-performing team that delivers exceptional hospitality and member experiences.
Ensure consistent quality, service, and presentation standards across all outlets.
Partner with the Executive Chef and culinary team to maintain innovative and seasonal menus aligned with member preferences and club standards.
Maintain strong visibility and engagement with members, guests, and staff.
Financial Management
Develop and manage annual budgets for all F&B outlets, with a focus on labor efficiency and cost control.
Monitor financial performance and implement strategies to achieve or exceed profitability goals.
Oversee inventory, purchasing, and vendor partnerships to maintain quality and cost efficiency while adapting to seasonal business fluctuations.
Member & Guest Experience
Foster a culture of genuine hospitality and personalized service.
Address and resolve member and guest concerns or feedback with professionalism and care.
Collaborate with the events team to enhance private dining and special event experiences within The Grille.
Marketing & Programming
Partner with the marketing team to develop creative promotions, themed dinners, and seasonal programming to drive engagement and revenue in all seasons.
Analyze business trends and member behavior to identify new opportunities for growth.
Ensure consistent communication of F&B offerings through menus, social media, and club communications.
Compliance & Standards
Ensure compliance with all health, safety, and liquor laws and regulations.
Maintain cleanliness, organization, and readiness of all F&B facilities.
Uphold company and club policies while setting high standards for professionalism and performance.
JOB REQUIREMENTS
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he/she can perform the essential functions of the job, with or without reasonable accommodation, using some combination of skills and abilities.
Minimum 5 years of progressive leadership experience in food and beverage management, preferably in a private club, resort, or upscale hospitality environment.
Proven success in financial management, labor control, and operational efficiency.
Strong leadership and interpersonal skills with the ability to inspire and motivate teams.
Exceptional organizational skills and attention to detail.
Strong understanding of member-based service culture and seasonal business cycles.
Excellent communication skills and a polished, professional presence.
ServSafe and/or alcohol service certification preferred.
