Your may objective is to ensure the food goes out properly, to the right people, in a timely manner. As the expo, you are the last line of defense from the BOH to the FOH. You must also be able to tell when something is plated or incorrectly, and you must be willing to alert the kitchen immediately. You also need to be aware of ticket times and relay that information to the kitchen often. Communication is key in this position.'
