Duties:

The Executive Sous Chef is responsible for the proper preparation of the planned menu and the overall supervision of kitchen staff. Closely collaborates with the Executive Chef and Food and Beverage Director to plan and implement global policies and procedures that will have a positive impact on the operations. In the absence of the Food and Beverage Director and the Executive Chef, the Executive Sous Chef will assume responsibility for the entire operation.

  • The Executive Sous Chef under the direction of the Executive Chef organizes all employee work assignments and schedules. Assists the kitchen staff in all aspects of daily assignments, as required. Informs the Executive Chef of all activities and operational opportunities, making suggestions for improvement and corrections as needed.
  • Orders, organizes, rotates and maintains the disaster food supplies levels for the community.
  • Conducts bi-weekly equipment and sanitation inspections of all kitchens ensuring compliance with San Diego County health codes.
  • Conducts staff training under the direction of the Executive Chef.
  • Acts as a department leader and provides direction as needed to junior culinary management.
  • Works closely with upper management to implement purchasing procedures using CPS vendors to reach corporate usage levels while maximizing incentives.
  • Administers payroll for culinary staff, including monitoring staff overtime and timecard approvals. Manages payroll activities in a timely and accurate manner.
  • Performs annual performance reviews for all kitchen staff.
  • Under the guidance of the Executive Chef, coordinates the utility team ensuring training, monthly meetings and staff utilization. Efficiently manages staffing needs to eliminate the use of outside staffing services.
  • Interviews job applicants as needed. Maintains work schedules for kitchen staff. Assists in ongoing in-service education programs for staff. Holds monthly meetings with kitchen staff.
  • Works closely with the Executive Chef for all \'back of house\' food and beverage operations.
  • Hires, trains, and supervises all chefs, cooks, and utility/stewarding staff.
  • Plans, costs, and executes all menus, including seasonal dining room menus, special events and catering.
  • Responsible for ongoing development and execution of standardized recipes.
  • Assists with preparation of departmental budget, operates within budgetary guidelines.
  • Maintains superior service standards and promotes good customer and interdepartmental relationships.
  • Responsible for ongoing development of departmental safety awareness/culture.
  • Assists in maintaining a high level of customer satisfaction for our residents and their guests.
  • Maintains daily, weekly, monthly statistical information as required.

Qualifications:
  • Minimum of five years\' experience as a sous chef in a hotel, restaurant, or club with fine dining
  • Minimum five years supervisory experience
  • Health care food & beverage experience preferred
  • Knowledge of kitchen equipment operations and maintenance. Some knowledge of nutrition and diet
  • Culinary education strongly preferred
  • Prior to beginning work at our community, applicants must complete and pass a drug screening, physical exam with tuberculosis (TB) skin test, and criminal clearance through FBI and Department of Justice (over 18 only). The background search includes minor misdemeanors and DUIs.
