Position Summary
We are seeking a skilled and passionate Chef de Partie to join our culinary team as an Overnight Baker. This role is essential in delivering exceptional baked goods and pastries to our guests each morning. The ideal candidate will have strong technical baking skills, the ability to work independently during overnight hours, and a commitment to maintaining the highest standards of quality and consistency.
Qualifications
Key Responsibilities
Prepare and bake a variety of breads, pastries, cakes, and desserts according to established recipes and standards
Ensure all baked goods are prepared fresh for morning service and meet quality specifications
Manage the overnight baking production schedule to ensure timely completion of all items
Maintain accurate inventory of baking supplies and ingredients
Monitor stock levels and communicate ordering needs to supervisory staff
Ensure proper storage and rotation of all baking ingredients and finished products
Maintain cleanliness and organization of the bakery work area, equipment, and storage spaces
Follow all food safety, hygiene, and sanitation standards and regulations
Operate and maintain bakery equipment including ovens, mixers, proofers, and other tools
Assist with recipe development and menu planning as needed
Train and supervise junior kitchen staff or apprentices when required
Complete production logs and documentation accurately
Collaborate with the culinary team to meet special requests and event requirements
Qualifications
Minimum 2-3 years experience as a baker or pastry chef in a hotel, restaurant, or high-volume bakery environment
Formal culinary or baking qualification preferred (Certificate III in Patisserie or equivalent)
Strong knowledge of baking techniques, ingredients, and equipment
Ability to work independently with minimal supervision during overnight shifts
Excellent time management and organizational skills
Knowledge of food safety and HACCP standards
Physical stamina to stand for extended periods and lift heavy items (up to 20kg)
Attention to detail and commitment to producing high-quality products consistently
Ability to work in a fast-paced environment and adapt to changing priorities
Flexibility to work overnight shifts, weekends, and holidays
Strong communication and teamwork skills
