Old Colony Smokehouse is seeking motivated individuals who would be interested in learning to work in the bbq pit operations division of our restaurant. This is an entry-level position as a meat prep/bbq pit assistant with the opportunity for further training, leading to advancement and increased responsibilities and pay for the right individual(s).
Physical Requirements:
- Ability to comfortably stand for full shift
- Ability to lift heavy cases of meat (up to 75lbs)
- Ability to stand, reach, bend, crouch
- Ability to work in hot and/or cold environments
- Ability to read, write, and communicate effectively
Required Skills:
- Knife skills preferred, but not required. Being comfortable working with a knife is required
- Basic math for converting recipes (addition, subtraction, multiplication, division, fractions, percentages)
- Neatness, cleanliness, and attention to detail is a must
- Must be articulate and able to communicate effectively
- Ability to self-manage without constant oversight
- Ability to time-manage in order to complete required tasks during shift
General Duties:
- Trim and season raw meat and poultry products
- Weigh raw and cooked meats to calculate yields
- Operate grinders, slicers, and other manual and mechanical processing equipment
- Make sausage
- Chop/shred/cut/season/portion and plate/package cooked meat and poultry products to order for customers
- Answer customer questions and general conversation
- Daily setup and breakdown/cleanup of work area
- Check-in and put away deliveries
- Make rubs, sauces, brines, and marinades
- Assist pitmaster in smoker loading & unloading and fire management
- Occasional loading/splitting/stacking of firewood
- Maintain a clean and organized work environment
- General cleaning and other duties as needed
Part-time and Full-time positions are available.
This position is integral to our operation. Punctuality and reliability is of utmost importance.
Preference will be given to candidates seeking to learn and advance their personal skill-set over candidates simply looking for a job.
This position is not for everyone. Morning shifts may start at 4am and evening shifts may end as late as 10pm depending on the day. Hard work is required for this position. Working in extreme temperatures, around live fires, and with potentially dangerous equipment is a regular occurrence. If you aren't up for this type of environment, this is not the position for you.
